\"Busuioaca de Moldova\" is in the same value class as the \"Grasa de Cotnari\". It is the Romanian aromatic wine \"marshal\". In front of a glass of \"Cotnari Busuioaca\", the consumer has a feeling of authentic admiration, and the specialist is left surprised and meditative. The print of the variety from which results this wine greatly depends on the duration and method in which the maceration-fermentation process takes place, in view of extracting the fragrance from the grape skin. Its color is bright yellow with greenish or yellow reflexes, depending on the passing of the years. Its aroma is unique, suggesting sweetness, reminding one of rose petals and wild forest strawberries, which gives it a distinct personality in comparison with the other aromatic wines. The complex taste combines the bouquet of basil with that of freshly gathered hay and the special aroma of basil pears. The grapes from which this wine is obtained are named \"Busuioaca (Tamaioasa) de Moldova\", a variety of grapes that is historically connected to Cotnari. In Cotnari, this type of grapes frequently exceeds 260 grams of sugar per must liter, from which results a wine with an alcoholic strength of minimum 11.5% and a content of over 60 grams of sugar per liter. The maximum admitted grape production is of 6 tons per hectare. The \"Tamaioasa (Busuioaca) de Moldova\" variety is part of the origin-controlled and quality-level category of wines; the grapes can be picked upon their drying up or becoming noble, or late in the season. The maturation is made in underground cellars for minimum two years, in oak barrels, after which the wine is left to get old in vintage cellars.
